NO mayo, NO dairy, NO egg items. Even Food Network will tell you this. Anything that can stand room temp is good. You don't wanna host a party and have everyone calling you the next day with a case of you know what.

I made cheddar bacon deviled eggs for my last potluck and they were devoured in minutes. You can avoid the food poisoning potential by using mustard (no mayo) and I set the serving tray on top of a container of ice to keep them cool. They didn't last long enough for any germs to form anyway :-)

A red, white and blue fruit salad and some poppy seed dressing. Yum!

I love making lite salads in the summer. Currently hothouse cucumber/toasted sesame seed salads with a white balsamic/olive oil/pear dressing.

Or orange and fennel salad tossed with a citrus emulsion.

I think a grilled corn salad would make for a delicious play on corn on the cob. All the goodness of fresh sweet corn with the smoky char goodness from grilling. Toss it with a vinaigrette of your choosing and some other brightly colored veggies, and possibly throw in a few finely chopped toasted nuts and you've got a winner.

do they already have meats for the bbq? sometimes i bring a case of hotdogs or burger patties and don't even worry about being creative.

Coleslaw with a vinaigrette dressing. Pasta salad, again with a vinaigrette dressing. Sliced veggies. A watermelon.

Potato salad. I put it in a shallow plastic container and set that container in a larger plastic container full of ice. Replenish the salad and ice as needed. Been doing it for 40 years and no one's gotten sick yet. You could do the same thing with deviled eggs or macaroni salad.

One of my favorite (and ridiculously easy salads) is:

Salsa, Corn, & Black Bean Salad
1 bag of frozen sweet corn
2 cans of black beans-drained and rinsed-can use spiced beans
1 container of fresh salsa from the dairy case
1 tsp of cumin, or to taste

Combine all ingredients and mix thoroughly.

Takes very little time to put together, has no worries in heat and also tastes great when served with chips.

@gthuffines: All very good suggestions and ones that we also do. Our house is notorious for throwing in "extras" all the time to any salad recipe and since our garden has all of those items growing, we are more than happy to adjusting the recipe.
