Horseradish cheese has a bit of a snap to it. It's good with red wines. There is also a peppercorn-garlic, & cheddar Thai curry.

I like horseradish cheese with my roast beef sandwiches, and I also buy a jalapeno cheese from some Amish people that live down the road. They (the amish) will make just about any cheese you want. They sell alot of their version of pepperjack, which burns the mouth a little more.

I like Cabot's super extra sharp hunter's cheese. Not spicy, but it has a twang.

i got a "salsa-jack" cheese from hyvee the other day at their deli counter, it was pretty good, could have been a little spicier though

Check a place like Wegman's or Costco, they have really good varieties of cheeses. Wegman's also usually has a pretty knowledgeable staff, so they could give you some really good recommendations based on what you do like. I've found some AMAZING cheeses at Wegman's.

Its hard to find, but delicious....habanero jack cheese. such as this one!

If you have a Whole Foods in your area, you might try visiting their cheese counter. Prices aren't that bad considering it IS "Whole Paycheck," and they have quite a variety. They're my Point Reyes Blue dealer. I be a junkie with that blue on my back.

@elraphbo: I love Habanero Cheddar from Cabot. I went on a tour of their factory in Vermont where they let you try every kind they make. I couldn't get enough of it and ended up buying some.
