If the scanner you want doesn't support Lion, try downloading the Vuescan software. There's a thread over at macrumors where someone had an old scanner that wouldn't work without it.

I use an Epson Workforce 323 printer/scanner/etc and it's great. Never tried scanning with an empty cartridge, so I can't speak to that.

@rprebel: unfortunately i've had two multi. one canon, and one HP that both would completely fail (no scan, no copy, no fax) if there were any issues with a cartridge. Both decided that randomly they would claim to missing a cartridge. That is why I would prefer a standalone flatbed, or a multi that was known to work without ink.

@lxzndr: I'd test mine, but all my ink cartridges are fairly new and once you remove them you can't use them anymore. I did find this, though.
