Hmm... I like sharp, pungent cheeses. A good stinky chevre is always nice.

I really like Munster (especially with Roast Beef) or good old-fashioned sharp-cheddar

Pretty much all cheese is good. I've tasted perhaps two that I didn't like.

I tend to eat (NY State or Vermont) extra sharp cheddar, pepper jack (or better, habanero jack), swiss, muenster, rambol fumé, provolone.

Personally, Tillamook sharp cheddar. Other brands just aren't the same.

My favorite is grilled cheese sandwiches made with Norwegian Jarlsberg cheese. Something like Swiss cheese, only slightly sweeter.

Smoked Gouda. Though I like almost all cheese, save Limberger.

I'm part Greek so I like a good crunchy Greek salad with Feta, also dolmathes with lemon sauce and Feta on the side. And spanikopita, and... and... all of it, really. Greek goat cheese is pungent - smells and tastes slightly of goats, no surprise there - it's salty, and very tasty!

@kcjones99: Yes to smoked Gouda, and Trader Joe's carries an especially good one - I make my own whole wheat sourdough crostini and have it slightly melted on those - heavenly!

Here in Philadelphia, "cheese" is spelled "Cheez." And it's almost always of the "Whiz" variety. The exception, for those holier-than-thou-gourmand-snooty-types, MIGHT be a brick o' Velveeta.

This is hard, but I'm going to have to go with Venezuelan Beaver Cheese.

Python jokes aside, I really like an extremely sharp cheddar. Wensleydale is quite good, but I can never find it in stores.

Beecher's Flagship Reserve has been getting good word around here. tho the local monger that had it went out of business.

I could never choose one but one of my recent favorites is iberico. It's similar to manchego, if you've ever had that.

On a side note, I think american cheese gets a really bad rap. American cheese isn't just the squishy stuff that comes in plastic, although that has its uses as well. But realy american cheese that you get freshly sliced from a deli is awesome and it gets no credit because of stupid kraft.
