The 2007 Domaine de la Buissière Bourgogne Pinot Noir is lively and bright, with notes of ripe red forest berries such as wild strawberry and zingy raspberry. The fruit is laced with notes of bacon, spice, earth and minerals. This wine's acidity will heighten the flavors of many dishes. When I worked at Le Bernardin, I paired this type of wine with fish. Try it with rare, seared tuna or pan-roasted monkfish with rich, red-wine butter sauce, or with roast chicken or light game, such as rabbit, quail or squab. Drink this now, or hold it for two to three years.
