Dating back to the early Roman Era, our Classic Porchetta encompasses the whole deboned pig, including the head. We begin with a natural, hormone free animal raised to our specifications. It is harvested to our specific, time honored methods. We then debone and after hand rubbing select spices, we sew the pig back together.
We roast the product in a custom Italian oven for over 4 hours at a temperature in excess of 500. The end result is the highest quality, cooked pork product in the world. The outside relates to Italian crackling, while the inside retains moisture united with the spices.
Traditional Porchetta is the perfect carving station. By preheating the oven to 450 for 40 minutes, and then serving under the lights, you can provide a culinary experience previously unavailable in the United States.
