Getting back to the knife set, I have not used the Ken Onion knives but I do have several knives made by shun. Some of the Alton Brown series which use the same type of metal and specs as these, and several of their economy fun color series. All of them are superb and worth the price. Using one of the AB knives, I quartered a 3 inch diameter asian pear and then sliced one quarter into as many and as thin a slices as I possibly could. I got 19 slices from that one quarter that were thin enough to see printed text through and showed a single layer of cells in the slice. I did not have any problems attempting this feat even though I am not knife skilled. It took no force todo the cutting as the knife is perfectly balanced and even though it is very lightweight (in ounces not in function), the balance gave it enought "weight" to make the cuts with very minimal effort. Shun knives are excellent for those with any form of arthritis or other hand mobility and dexterity issues

These are nice knives, but damn. 400 bucks for 5 knives. Wow. Don't think I can really justify that.
