The Cabernet Sauvignon dominates the senses at first, but quickly do the Merlot and the Malbec make themselves known. Shazam – only 10 minutes after I pulled the cork and poured a glass, the aromas were expressive and explosive, with notes of roasted wild Italian plum, black cherry, licorice and rich tones of green peppercorn and candied violet. I also found notes of juicy red cherry, blackberry and black currant mixed with fresh Provençal herbs, such as sage, tarragon and thyme. The wine's core of minerality, cedar and graphite accent the rich herbal notes. A hint of spicy white pepper rounds out the refined, yet lush finish. This wine is drinking terrific today, and can remain in your cellar for another three to five years. Pair it with chimichurri grilled steak, sweet peas with morels and a crisp garden salad.
